Black Bean and Corn Soft Tacos

This version of a taco has a great combo of black beans and corn, with a little bit of ZIPPPP from the sauce. The meal serves about 4 people. This is especially good for you people who cant help but to stop into taco bell and grab a little somethin-somethin.

*What do I need?*

1/2 cup of sour cream
1 (4 ounce) can hot green chiles
1 (15 ounce) can black beans
1 (15 ounce) can corn kernels
1 tablespoon chili powder
16 (6 inch) corn tortillas or 8 (8 inch) flour tortilas
1 1/2 (one and a half) cups of shredded lettuce
1 cup grated cheddar cheese

*What do i do?*

Combine the sour cream and green chiles in a small bowl and set aside.

Drain the beans, rinse under cold water, and place those bad boys in a small saucepan. Add the corn and all of its liquid and cook it over a medium/low heat. Stir occasionally for 8 to 10 minutes, or until it gets hot. Next drain the liquid, and stir in the chili powder.

Take 4 corn tortillas, or 2 flour tortillas onto a plate. If you decided to use the corn tortillas, double them up, then youll have 2 stacks of 2 tortillas each. Next you spoon some of the black bean mixture onto the centers. Top it with lettuce, cheese, and some sour cream sauce as desired. Bada Bing. You've got yourself a delicious black bean and corn taco.
