Tomato Tart

This tasty meal is kinda like pizza, but easier. It takes all of about 2 minutes to prepare, looks amazing, and its taste is out of this world. If you want to eat good, and only have a couple minutes to spare, this is for you.



* What do I need? *


-1 sheet of frozen puff pastry, thawed

-2 tablespoons of spicy mustard

-5 slices of Swiss cheese (about 4 ounces total)

-2 large tomatoes

-1/2 (half) teaspoon Italian seasoning




* How to prepare it *



-Preheat your oven to 400 degrees F. and coat a baking sheet generously with cooking spray or oil.

-Unfold your puff pastry sheet and place it in the prepared pan.

-Spread the mustard over the pastry, leaving a 3/4 inch margin all around the edges, and top it with the swiss cheese.

-Slice the tomatoes 1/4 to 3/8 inch thick, arrange them over the cheese, then sprinkle with italian seasoning.

-All of that above takes about 2 minutes!!!!! Nows just the waiting game.

-Bake for 30 to 40 minutes, or until the puff pastry is golden brown.

-Serve HOT...ENJOY.

Black Bean and Corn Soft Tacos

This version of a taco has a great combo of black beans and corn, with a little bit of ZIPPPP from the sauce. The meal serves about 4 people. This is especially good for you people who cant help but to stop into taco bell and grab a little somethin-somethin.

*What do I need?*

1/2 cup of sour cream
1 (4 ounce) can hot green chiles
1 (15 ounce) can black beans
1 (15 ounce) can corn kernels
1 tablespoon chili powder
16 (6 inch) corn tortillas or 8 (8 inch) flour tortilas
1 1/2 (one and a half) cups of shredded lettuce
1 cup grated cheddar cheese

*What do i do?*

Combine the sour cream and green chiles in a small bowl and set aside.

Drain the beans, rinse under cold water, and place those bad boys in a small saucepan. Add the corn and all of its liquid and cook it over a medium/low heat. Stir occasionally for 8 to 10 minutes, or until it gets hot. Next drain the liquid, and stir in the chili powder.

Take 4 corn tortillas, or 2 flour tortillas onto a plate. If you decided to use the corn tortillas, double them up, then youll have 2 stacks of 2 tortillas each. Next you spoon some of the black bean mixture onto the centers. Top it with lettuce, cheese, and some sour cream sauce as desired. Bada Bing. You've got yourself a delicious black bean and corn taco. Caramelized Onion Tart

A very wise man once said "Its not easy being green". His name was Kermit the frog. Haha. What a great quote. I think I’ll start all my vegetarian posts with that quote. But anyway, HEY!! Kermit was wrong. Going green isn’t hard. Especially if you've got the right recipes. With one taste of caramelized onion tart you’ll be hooked! Its so sweet that it could even be a dessert. Just follow these simple directions.


**What You'll Need**
1 prepared piecrust
3 large onions
2 tablespoons butter
Salt and Pepper
3 egg yolks
1 (12 ounce) can of evaporated milk


**How Do I Make It?**
Calm down! You'll be eating soon!
-Preheat your oven to 365 degrees F.
-Press your piecrust into an ungreased 8 inch square baking pan
-Peel the onions, cut them in half, then cut into very thin slices
-Place the butter in a large skillet over medium heat, and add the onions.
-Cook em'! stirring occasionally for 25 to 30 minutes, or until the onions are golden brown.
-Spread the onions evenly over the piecrust, and season them with salt and pepper.
-Beat the egg yolk slightly, then mix in with evaporated milk.
- Pour this over the onions and bake for 20 to 25 minutes, or until it is set in the center.
-Remove from the oven and cool completely.
-Cut into one inch squares just prior to serving.


Bada Bing Bada Boom. You’ve got a delicious meal right there. If you followed everything right, it makes about 60 pieces of greatness.
